- 4 boneless, skinless chicken breasts
- 1/2 cup basil pesto
- 2 large tomatoes, sliced
- 8 oz fresh mozzarella cheese, sliced
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Lightly grease a baking dish with olive oil.
- Place the chicken breasts in the dish and season both sides with salt and pepper.
- Spread about 2 tablespoons of pesto over each chicken breast.
- Top each with tomato slices and then mozzarella slices.
- Bake for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish with fresh basil leaves before serving, if desired.
