Description

Banana Bread Pudding is a rich and comforting dessert that combines ripe bananas and chunks of bread soaked in a sweet custard, baked until golden, and optionally topped with caramel or whipped cream.


Ingredients

  • 4 cups cubed day-old bread (French or brioche works well)
  • 2 ripe bananas, mashed
  • 3 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • Butter for greasing
  • Caramel sauce or whipped cream for serving (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter.
  2. In a large bowl, whisk together eggs, milk, cream, granulated sugar, brown sugar, vanilla, cinnamon, and salt.
  3. Stir in the mashed bananas until well combined.
  4. Add the bread cubes to the mixture and gently stir until all the bread is soaked.
  5. Let sit for 10 minutes to absorb, then pour into the prepared baking dish.
  6. Bake for 45–50 minutes, or until the top is golden and the center is set.
  7. Cool slightly before serving. Drizzle with caramel sauce or top with whipped cream if desired.

Notes

  • Use very ripe bananas for the best flavor and sweetness.
  • Stale bread works better than fresh for absorbing the custard.
  • This can be made ahead and reheated in the oven or microwave.
