Banana Bread Pudding is a rich and comforting dessert that combines ripe bananas and chunks of bread soaked in a sweet custard, baked until golden, and optionally topped with caramel or whipped cream.

- 4 cups cubed day-old bread (French or brioche works well)
- 2 ripe bananas, mashed
- 3 large eggs
- 2 cups milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- Butter for greasing
- Caramel sauce or whipped cream for serving (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter.
- In a large bowl, whisk together eggs, milk, cream, granulated sugar, brown sugar, vanilla, cinnamon, and salt.
- Stir in the mashed bananas until well combined.
- Add the bread cubes to the mixture and gently stir until all the bread is soaked.
- Let sit for 10 minutes to absorb, then pour into the prepared baking dish.
- Bake for 45–50 minutes, or until the top is golden and the center is set.
- Cool slightly before serving. Drizzle with caramel sauce or top with whipped cream if desired.
Notes
- Use very ripe bananas for the best flavor and sweetness.
- Stale bread works better than fresh for absorbing the custard.
- This can be made ahead and reheated in the oven or microwave.
