Description

Baked Potato Rounds are crispy, golden potato slices topped with melted cheddar cheese, crispy bacon, and fresh green onions. This easy appetizer combines savory flavors and a satisfying texture, perfect for parties or a comforting snack.

Ingredients

Scale

Potatoes

  • 3 medium russet potatoes, scrubbed and sliced into 1/4-inch rounds

Seasoning & Oil

  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

Toppings

  • 1 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon
  • 2 green onions, thinly sliced
  • Sour cream for serving (optional)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Toss Potatoes with Seasoning: In a large bowl, combine the potato rounds with olive oil, salt, black pepper, garlic powder, and smoked paprika. Toss well until all slices are evenly coated with the seasoning and oil.
  3. Arrange and Bake Potatoes: Lay the potato rounds out in a single layer on the prepared baking sheet. Bake them in the preheated oven for 25–30 minutes, flipping halfway through to ensure even crisping and golden edges.
  4. Add Cheese and Bacon: Remove the baking sheet from the oven and sprinkle shredded cheddar cheese and crumbled bacon evenly over each potato round. Return the sheet to the oven for an additional 5–7 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve: Once baked, garnish the potato rounds with thinly sliced green onions. Serve warm with sour cream on the side if desired for a creamy complement.

Notes

  • Yukon Gold potatoes can be used instead of russet potatoes for a creamier texture.
  • For a vegetarian version, omit the bacon or replace with plant-based crumbles.
  • Add a sprinkle of red pepper flakes for a spicy kick.
