Description

Baked Feta Eggs is a delicious Mediterranean-inspired breakfast dish featuring creamy crumbled feta cheese baked with garlic and herbs, topped with perfectly baked eggs. Served with toasted bread or pita, it offers a flavorful, high-protein start to your day with a touch of spice and fresh herbs.

Ingredients

Scale

Main Ingredients

  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon dried oregano or thyme
  • 2–4 large eggs
  • Salt and black pepper, to taste
  • Fresh parsley or basil, for garnish
  • Toasted bread or pita, for serving

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the feta and eggs.
  2. Prepare the feta base: Drizzle olive oil into a small oven-safe skillet or baking dish. Add the crumbled feta cheese, then sprinkle with minced garlic, red pepper flakes (if using), and dried oregano or thyme.
  3. Bake the feta: Place the skillet in the oven and bake for 5–7 minutes until the feta cheese is warm and starts to soften but has not completely melted.
  4. Add the eggs: Carefully crack the eggs over the baked feta, spacing them evenly across the dish. Season with salt and black pepper according to your taste.
  5. Bake the eggs: Return the dish to the oven and bake for an additional 8–12 minutes. Bake longer for fully set yolks or less time for runnier yolks.
  6. Garnish and serve: Remove the dish from oven, garnish with fresh parsley or basil, and serve immediately with toasted bread or pita for dipping.

Notes

  • Add chopped tomatoes or spinach before baking for extra flavor and a pop of color.
  • This recipe can be made in individual ramekins to serve single portions conveniently.
  • Adjust the amount of olive oil or herbs to your preference.
  • Using a small oven-safe skillet ensures even cooking and easy transfer in and out of the oven.
