  • 2 cups cornflakes, crushed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 cup honey
  • 2 tablespoons hot sauce (e.g., Frank’s RedHot)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, combine the buttermilk, garlic powder, smoked paprika, salt, and black pepper. Add the chicken breasts and marinate for at least 30 minutes (or up to overnight in the fridge).
  3. In a separate bowl, mix crushed cornflakes, breadcrumbs, and Parmesan cheese. Drizzle olive oil over the mixture and stir to combine.
  4. Remove chicken from the marinade and coat thoroughly in the cornflake mixture, pressing gently to adhere.
  5. Place the coated chicken on the prepared baking sheet and bake for 25–30 minutes, or until golden brown and cooked through (internal temp 165°F).
  6. While the chicken bakes, prepare the hot honey by combining honey, hot sauce, apple cider vinegar, and red pepper flakes in a small saucepan. Heat over low heat until warm and well blended.
  7. Drizzle the hot honey over the baked chicken before serving or serve it on the side for dipping.
