Ingredients

  • 4 cups Napa cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 cup carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1/2 cup cilantro leaves
  • 1/4 cup green onions, sliced
  • 1/4 cup sliced almonds (optional)
  • 1 tablespoon sesame seeds
  • For the dressing:
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, grated
  • 1 garlic clove, minced
  • 1 teaspoon sriracha (optional)

Instructions

  1. In a large bowl, combine shredded chicken, Napa cabbage, red cabbage, carrots, red bell pepper, cilantro, and green onions.
  2. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, olive oil, honey, grated ginger, minced garlic, and sriracha to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Top with sliced almonds and sesame seeds.
  5. Serve immediately or chill for 15 minutes to let flavors meld.

Notes

  • You can use rotisserie chicken for convenience.
  • Adjust sriracha to your spice preference.
