- 4 cups Napa cabbage, shredded
- 1 cup red cabbage, shredded
- 1 cup carrots, julienned
- 1 red bell pepper, thinly sliced
- 1/2 cup cilantro leaves
- 1/4 cup green onions, sliced
- 1/4 cup sliced almonds (optional)
- 1 tablespoon sesame seeds
- For the dressing:
- 1/4 cup rice vinegar
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon fresh ginger, grated
- 1 garlic clove, minced
- 1 teaspoon sriracha (optional)
Instructions
- In a large bowl, combine shredded chicken, Napa cabbage, red cabbage, carrots, red bell pepper, cilantro, and green onions.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, olive oil, honey, grated ginger, minced garlic, and sriracha to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Top with sliced almonds and sesame seeds.
- Serve immediately or chill for 15 minutes to let flavors meld.
Notes
- You can use rotisserie chicken for convenience.
- Adjust sriracha to your spice preference.
- Add mandarin oranges or crispy wontons for variation.
