Description
Angel Biscuits are light, fluffy, and buttery biscuits that combine the best qualities of dinner rolls and traditional southern biscuits, thanks to the use of both yeast and baking powder.

- 2 1/4 teaspoons active dry yeast
- 1/4 cup warm water (110°F)
- 5 cups all-purpose flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup cold unsalted butter, cut into pieces
- 2 cups buttermilk
- 2 tablespoons melted butter (for brushing)
Instructions
- In a small bowl, dissolve yeast in warm water and let stand for 5-10 minutes until foamy.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Cut in the cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
- Add the yeast mixture and buttermilk to the flour mixture. Stir just until combined.
- Turn the dough onto a floured surface and knead lightly 2-3 times. Pat into a 1-inch thick rectangle.
- Cut with a biscuit cutter and place on a greased or parchment-lined baking sheet, close together for soft sides or spaced apart for crisp edges.
- Cover loosely and let rise in a warm place for 30-45 minutes.
- Preheat oven to 400°F (200°C).
- Bake for 12-15 minutes or until golden brown.
- Brush tops with melted butter and serve warm.
Notes
- Can be made ahead and refrigerated overnight before baking.
- Great served with honey, jam, or gravy.
- Use cold butter for flakier texture.
