Description

These Almond Flour Chocolate Chip Cookies are soft, chewy, and packed with gooey chocolate chips. Made with almond flour, they’re naturally gluten-free and perfect for a healthier indulgence.


Ingredients

  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix almond flour, baking soda, and salt.
  3. In a separate bowl, whisk together melted coconut oil, maple syrup (or honey), vanilla extract, and the egg until smooth.
  4. Combine the wet ingredients with the dry ingredients and stir until well mixed.
  5. Fold in the chocolate chips.
  6. Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Flatten slightly with your fingers or the back of a spoon.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Use mini chocolate chips for more even chocolate distribution.
  • Cookies will be soft when hot but firm up as they cool.
  • Store in an airtight container for up to 5 days.
