Description

Crispy and flavorful, these Air Fryer Southwest Egg Rolls are packed with a zesty mix of vegetables, beans, and cheese, making them a perfect appetizer or snack.


Ingredients

  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, sliced
  • 1 cup shredded Mexican cheese blend
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 8 egg roll wrappers
  • Olive oil spray

Instructions

  1. In a large bowl, combine chicken, black beans, corn, bell pepper, green onions, cheese, cumin, chili powder, garlic powder, and salt. Mix well.
  2. Place an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the filling near the center.
  3. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a bit of water.
  4. Repeat with the remaining wrappers and filling.
  5. Lightly spray the egg rolls with olive oil spray.
  6. Preheat the air fryer to 375°F (190°C). Place egg rolls in the air fryer basket in a single layer.
  7. Cook for 8–10 minutes, flipping halfway through, until golden brown and crispy.
  8. Serve hot with your favorite dipping sauce.

Notes

  • You can substitute chicken with tofu or omit it for a vegetarian version.
  • Serve with salsa, guacamole, or sour cream for added flavor.
