- 1 cup cooked chicken, shredded
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- 1 cup shredded Mexican cheese blend
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 8 egg roll wrappers
- Olive oil spray
Instructions
- In a large bowl, combine chicken, black beans, corn, bell pepper, green onions, cheese, cumin, chili powder, garlic powder, and salt. Mix well.
- Place an egg roll wrapper on a clean surface with one corner pointing toward you. Spoon about 2 tablespoons of the filling near the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a bit of water.
- Repeat with the remaining wrappers and filling.
- Lightly spray the egg rolls with olive oil spray.
- Preheat the air fryer to 375°F (190°C). Place egg rolls in the air fryer basket in a single layer.
- Cook for 8–10 minutes, flipping halfway through, until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
Notes
- You can substitute chicken with tofu or omit it for a vegetarian version.
- Serve with salsa, guacamole, or sour cream for added flavor.
