- 1 cup shredded cheese (optional)

- 1/2 tsp black pepper
- 1 tsp salt
- 2 tbsp olive oil
- 1 cup cooked rice or pasta (optional)
- 1/2 cup frozen peas or corn
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery; sauté for 5 minutes until softened.
- Add garlic and cook for 1 more minute.
- Stir in ground meat and cook until browned.
- Add potatoes, diced tomatoes, and broth to the pot.
- Season with thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes or until vegetables are tender.
- Add peas or corn and cooked rice or pasta if using; simmer for an additional 5 minutes.
- Stir in cheese if desired, and serve hot.
Notes
