Description

A quick, vibrant and flavor-packed Italian chopped salad loaded with fresh vegetables, cured meats, cheese, and a zesty homemade dressing — ready in just 10 minutes.


Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup chopped radicchio
  • 1/2 cup chopped cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup thinly sliced red onion
  • 1/2 cup sliced pepperoncini
  • 1/2 cup chopped salami
  • 1/4 cup chopped prosciutto
  • 1/2 cup cubed provolone cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, combine the romaine lettuce, radicchio, cucumber, cherry tomatoes, red onion, pepperoncini, salami, prosciutto, and provolone cheese.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad and toss until evenly coated.
  4. Top with grated Parmesan cheese and serve immediately.

Notes

  • For a vegetarian version, omit the meats and add chickpeas or olives.
  • Best served immediately after dressing to retain crispness.
  • You can prep the ingredients in advance and mix just before serving.
